Gingerbread Smoothie
 
 
This simple smoothie tastes exactly like a spicy gingerbread cookie, but without an overload of sugar and fat. Naturally vegan.
Serves: 1
Ingredients
  • ¼ cup ice cubes
  • ½ frozen banana
  • ¾ cup unsweetened vanilla almond milk
  • ½ teaspoon fresh ginger, grated (see Notes)
  • ½ teaspoon cinnamon
  • 2 teaspoons molasses
  • crystallized ginger for garnish (optional)
Instructions
  1. Combine all of the ingredients, except the crystallized ginger, in your blender. Blend on high speed until smooth.
Notes
I love buying lots of fresh ginger when it's looking wonderful in the store. I peel the outer layer and freeze it whole in a zipper bag. It grates really nicely when frozen.

This smoothie comes in well under 150 calories per serving. Whoohoo!

Try adding some vodka to this to create a great frozen holiday cocktail! About 1.5 to 2 ounces per serving would be perfect. Cheers!
