  • ¾ cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground allspice
  • ¾ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ⅛ teaspoon ground black pepper
  • 2 large eggs, room temperature
  • ⅓ cup avocado oil or melted coconut oil
  • ½ cup pure dark maple syrup
  • ¼ cup almond milk
  • 1½ teaspoons pure vanilla extract
  • 1½ cups mashed banana (about 3 medium bananas)
  1. Preheat your oven to 325 degrees. Grease a loaf pan or line it with parchment.
  2. In a large bowl, whisk together the flours, baking soda, salt and spices, until combined well.
  3. In a medium bowl, beat the eggs lightly, then add the avocado oil and maple. Whisk to combine. Add the milk, vanilla and mashed banana and whisk a bit more.
  4. Pour the wet ingredients on top of the dry and stir just until combined. Do not overmix.
  5. Pour the batter into your prepared loaf pan. Bake for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Cool for 10 minutes before removing the loaf from the pan. Allow to cool completely on a wire rack before cutting.
If you'd like, you can use all whole wheat flour for the 1 cup all-purpose flour and ¾ cup whole wheat flour.

To make this gluten free, use an all purpose gluten free mix that includes xanthan gum.

To make this vegan, substitute the two eggs with a flax egg substitute. Mix 2 tablespoons flaxseed meal with 6 tablespoons of water and allow to sit for 15 minutes before mixing into the recipe.
