Fresh Peach and Pomegranate Daiquiri

One of the things I look forward to most when planning a party, especially in the summertime, is creating a new cocktail. With seasonal fresh fruits, it’s hard to go wrong. We’re always sure to have lots of beer and wine on hand, but it’s so much fun to greet your guests with a fun new drink. This one…oh my goodness. This may be my most favorite cocktail yet. Wonderfully frosty, fresh and peachy with just the right amount of sweetness! My secret ingredient enhances the flavor of the peach so well.

Several years ago, a friend introduced me to PAMA liqueur. It was served after dinner, poured over a frosty scoop of lemon sorbet. It was so heavenly, we bought a bottle soon after. We’ve been enjoying it since. PAMA is made with pure pomegranate juice and blended with vodka and a bit of tequila. The flavor is smooth, sweet and really lovely with a gorgeous deep crimson color. It tastes delicious on its own, mixed into drinks, poured over desserts or even in savory recipes!

Fresh Peach and Pomegranate Daiquiri

Serves: 2 cocktails

Ingredients

  • 2 peaches stones removed and cut into chunks
  • 2 ounces PAMA Liqueur
  • 2 ounces white rum
  • 1/2 ounce fresh lemon juice
  • 1/2 cup ice cubes
  • fresh mint for garnish

Instructions

  • Place the cut peaches on a baking sheet and put them in the freezer for at least one hour.
  • In a blender, place the ingredients, including the frozen peaches in the order given. Blend until smooth. Pour into serving glasses and garnish with a sprig of mint.

    Peaches are chin-drippingly perfect right now, the mint is taking over the garden, and an icy quaff to beat this relentless heat and humidity sounds like a wise idea! Thanks for the great recipe, Caroline. CHEERS.

    I bought a bunch of peaches to make muffins, but a heat-wave suddenly hit us and I cannot bare the thought of turning on the oven. But a cooling cocktail on the other hand…… Tasty!
