Gingerbread Smoothie

Preparing for the holidays and keeping up with work have gotten the best of me. How do the days get away from us so quickly? I start each day with a completely unrealistic list of “To Do’s” then feel surprisingly baffled by how they didn’t all get done. Sigh.

If you’re feeling the same way…first, I’m sending you virtual hugs…second, this Gingerbread Smoothie may be exactly what you need. My apologies to all of the gingerbread men of the world, but really guys, I have no time to make you right now and truly, this smoothie is kind of filling that void. It tastes just like a spicy, sweet gingerbread cookie and yet, I feel completely guiltless drinking this…and right now, I don’t need any more hangups!

Here’s to a quick zip of the blender and time to get all of your “To Do’s” done. Well, mostly.

Gingerbread Smoothie

This simple smoothie tastes exactly like a spicy gingerbread cookie, but without an overload of sugar and fat. Naturally vegan.
Serves: 1

Ingredients

  • 1/4 cup ice cubes
  • 1/2 frozen banana
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 teaspoon fresh ginger grated (see Notes)
  • 1/2 teaspoon cinnamon
  • 2 teaspoons molasses
  • crystallized ginger for garnish optional

Instructions

  • Combine all of the ingredients, except the crystallized ginger, in your blender. Blend on high speed until smooth.

Notes

I love buying lots of fresh ginger when it's looking wonderful in the store. I peel the outer layer and freeze it whole in a zipper bag. It grates really nicely when frozen.
This smoothie comes in well under 150 calories per serving. Whoohoo!
Try adding some vodka to this to create a great frozen holiday cocktail! About 1.5 to 2 ounces per serving would be perfect. Cheers!

    I am new to our website. Love the looks of the gingerbread smoothie, and I’m sure I will want to try more of your recipes. My question is, how do I print them out without having to print the comments etc. Just want the wonderful recipe. Thanks for your help!

      Thanks so much, Jeri! So happy you found me! That’s a great question…I’ve recently had my site redesigned and going forward, the recipes have a new format. Unfortunately, the old recipes need to all be reformatted individually to make printing easier. I’m slowly making my way through them. I’ll work on this one right now so that you’ll be able to print it out.

    This sounds awesome! Have you tried sweetening it with anything other than moleasses?

      Thanks so much, Abbey! I’ve only used molasses in this recipe, but you could replace that with honey, if you’d like. I’d start with just one teaspoon and test it for sweetness before adding any more, since most of the sweetness comes from the banana.

    Wow. What a wonderful drink. A refreshing change from thicker smoothie I often have. I can see myself blending this drink then heating it up in a small saucepan at winter time. Thank you for your recipe :-)
