Summer entertaining is, by far, the most fun…take a peek at some great ideas below and a fun contest! Whether it’s just having a couple of friends over to sit on the deck with some drinks and snacks or a full-blown shindig by the pool, warm weather parties can be the easiest to pull together. When it comes to food, keep things simple by grilling your favorites and using fresh and simple ingredients for everything else. Summer is the time to make the most of fresh produce.

This salsa is amazing! It uses summer’s best tomatoes, sweet and juicy and whizzes up in either your blender of food processor in seconds. Just allow it to sit in the fridge for an hour or so for the flavors to come together. You may never buy salsa in a jar again!

Salsa Fresca

Ingredients

  • 1 pound tomatoes cut into large chunks
  • 1/2 medium red onion cut into large chunks
  • 2 medium jalapeño peppers deseeded, if you do not want too much heat
  • 1 small serrano peppers see Notes
  • 3 cloves garlic minced
  • juice of one lime
  • 1/2 bunch cilantro
  • 1/2 teaspoon salt

Instructions

  • Place all of the ingredients into your food processor or blender. Pulse with short bursts until desired consistency. Alternately, you can certainly finely chop the ingredients and combine in a bowl. Taste test and add additional salt, if needed.

Notes

Omit the serrano peppers if you don’t like a spicy salsa. I love to combine them with jalapeños because I love their flavors and heat together.
For a thicker, more concentrated salsa, squeeze the seeds out of the tomatoes before processing. I leave them in…I love their juiciness!
