This simple Salsa Verde is deliciously tangy, spicy and smokey. This is such an easy and versatile recipe!

Ingredients
1 1/2poundsfresh tomatilloshusked and rinsed
2medium jalapeños
1large sweet onionpeeled and halved
4clovesgarlicpeeled
2teaspoonsextra virgin olive oil
kosher salt
4 to 6sprigs fresh cilantro
juice of one limesee Notes
Instructions
Preheat your grill or grill pan on high heat.
Place the tomatillos, jalapeños, onion, and garlic on a pan or in a dish. Drizzle with olive oil and sprinkle with a bit of kosher salt.
Grill the vegetables until the tomatillos have softened and have developed a nice char. Remove from the grill and return to the pan or dish.
Place the vegetables into your food processor or blender. Add the cilantro and lime juice. Process until chopped finely, but slightly chunky.
Notes
Use more or less lime depending on the flavor of your tomatillos. I like to add a splash of red wine vinegar to amp up the tartness if my tomatillos are a bit too ripe.
