Ingredients
1/3cuporganic raw unfiltered apple cider vinegar
2/3cupextra-virgin olive oil
2teaspoonsDijon mustard
1tablespoonchia seeds
1teaspoonorganic raw honey orfor vegans pure maple syrup
1/2teaspoonpink Himalayan sea salt
1/4teaspoonfreshly ground black pepper
Instructions
Combine all ingredients in a 12 ounce or larger jar with a tight fitting lid. Cover and shake vigorously.
Notes
As the vinaigrette sits, the chia seeds will swell and create a thicker texture. This is nice, because it helps the dressing to cling to the greens and allows you to actually use a lot less of it.
