    My family’s favorite healthy meal is grilled veggie flatbread pizzas. I usually grill up seasonal veggies like summer squash, zucchini, peppers, broccoli, etc. and then grill the pizzas, brush with garlic olive oil, top with the grilled veggies. Then we sprinkle a bit of cheese on it. I like feta but my daughter will either do a super light sprinkling of parm or mozzarella depending on her mood.

    Anything and everything on top of spaghetti squash! Seriously, this is one ingredient that you can make practically any type of dish with!

    Red quinoa, baby kale, dried cranberries, blueberries, mango, raisins, almonds, carrots salad. It is delicious.

    When the garden is producing, we love to have a salad of mixed greens with tomatoes, a sprinkling of feta, dressed with a homemade vinaigrette.

    I love a great greek quiona salad with red onion, cucumber, olives, cherry tomatos and feta. It’s fresh, light and the perfect side to a dinner or lunch option!

    My family (kids included) love salads. Our favorite snack is also healthy, roasted chickpeas! Usually spicy with paprika and a big of cayenne.

    I adore roasted Brussels sprouts. A little extra virgin olive oil, garlic, pepper and Parmesan cheese. My boyfriend even admitted that they were good. But not to me. :)

    My family’s favorite meal is grilled chicken salad. We love it and is easily changed up with different salad ingredients.

    Favourite meal is really a hearty freshly squeezed drink of 1/3 raw beetroot and 2/3 apple (Smitten or similar variety). Having one now!

    We love roast chicken on a bed of veggies, accompanied by roasted portobello mushrooms stuffed with brown-rice risotto with sun-dried tomatoes and parmesan cheese!

    We love to make grilled salmon tacos with a lime, cilantro dressing. Instead of using taco or tortilla shells we use romaine lettuce leaves, healthy and delicious!

    Oven-roasted organic beets from the Farmer’s Market over a bed of fresh baby greens, topped with a ginger- teriyaki dressing and goat cheese. Amazing!

    Our favorite go to meal are Mexican bowls. We usually start with a base of rice or quinoa and layer on beans and a ton of different veggies! Love how versatile it is:)

    Healthy and light will center on a bed of lettuce greens at our house. Structure from a scoop of cooked grains and more crunchy vegetables make for a flavorful and satisfying meal.

    Favorite healthy meal is a rice bowl – so many options to make it healthy with different combinations veggies, beans, chicken. And this cookbook looks fabulous!

    We love kalua pork! We eat it once a week. I’m not 100% sure that’s considered healthy but since it’s pretty much straight protein we like to think of it that way :)

    Umm… I was so excited, I hit “post comment” before I finished my comment. ;-) My favorite healthy go-to meal is my home made vegetable soup. I make my own stock and use whatever seasonal vegetables are in abundance at the time and what I have on hand. I pair it my a toasted slice of my boule bread and it is a healthy, hearty, and filling meal.

    My go to healthy meal is fish tacos! Usually halibut, topped with paprika, lime and cabbage. Serve with a side dish of corn. Yum!
