This simple Mediterranean Omelet or Omelette (both are correct), whips up quicker than you’d imagine. If you love bold Mediterranean flavors, the feta cheese, Kalamata olives, tomatoes and roasted red peppers in this fluffy omelet are calling your name.

I love breakfast. So much. The thing is, it needs to happen after I’ve made my cup of coffee and it needs to be easy. And as much as I hate to admit it, my husband makes a much better omelet than I do. So, I usually reserve them for weekend breakfasts when we can chop and cook together. I’ve found something new that I really love that makes weekday omelets much easier. This OXO Good Grips Microwave Omelet Maker.

I have to admit to being skeptical at first. I don’t normally cook anything in my microwave. I really only use it to melt things or reheat quickly.  I was impressed by this simple, well thought out design. This flexible, BPA-free, omelet maker, folds and remains closed with easy tabs to steam veggies before adding the eggs. Once cooked, that flexible design makes folding the omelet over a cinch.  The veggies cook in just about thirty to sixty seconds and once the egg is added, your omelet is ready in two to two and a half minutes.

As easy as the omelet maker is, I can barely form sentences in the morning without a cup of coffee. I constantly change my method of coffee-making. Making a single cup of coffee works well for me. We all enjoy different varieties in my house. This pour-over maker fits over any mug.  What I love best, is the measurement markings on the water tank. They make filling it so easy as it regulates the flow of water into the dripper, giving you the ideal brew time.

Mediterranean Omelet

This simple Mediterranean Omelet or Omelette (both are correct), whips up quicker than you'd imagine. If you love bold Mediterranean flavors, the feta cheese, Kalamata olives, tomatoes and roasted red peppers in this fluffy omelet are calling your name. | Vegetarian | Gluten-Free
Serves: 1

Ingredients

  • 2 large eggs
  • 1 tablespoon milk
  • extra virgin olive oil
  • small handful fresh baby spinach coarsely chopped
  • 2 tablespoons diced roasted red pepper
  • 2 tablespoons diced fresh tomato
  • 2 tablespoons feta cheese crumbles
  • 1 tablespoon sliced Kalamata olives
  • fresh parsley

Instructions

  • In a small bowl, whisk the egg and milk and set aside.
  • Grease the inside of the omelet maker with just a bit of olive oil. Add the spinach, peppers and tomato. Microwave for 30 seconds. Add the egg mixture and give it a stir. Microwave for 2 1/2 minutes or until set in the middle. Add the feta and olives. Fold over and serve with a sprinkling of parsley and additional tomato and cheese if desired.

    I love this recipe and when I separate the yolks and fluff up the whites separate–What a surprise. I also put some heavy whipping cream in the yolks to give it a smooth texture. I’ve had for years a Chef Giornali’s Omelet Pan and has NEVER failed me. The flip mechanisms are in the handle and the non-stick interior is unbelievably durable. My center fillings are chopped kale, slivers Genoa Salami, minced garlic, parmesan cheese, olives, dried tomatoes, and feta cheese. After flipped from both sides of this pan I put fresh sliced Basil Leave and more grated cheese and voila WHAT a MASTERPIECE!!
