I love creating new smoothies, but, to be honest, I’ve had a love-hate relationship with my blender for years. You may remember how I’ve had to fight with it to get a nice, thick smoothie. The other issue was my blender’s inability to process harder, more dense ingredients and give me a smooth and silky end result.

I’ve actually been making this carrot cake smoothie for over a year now. The problem was, I had to not only break out my blender, but the juicer as well. My old blender couldn’t process the carrots enough to give me a palatable smoothie, so I’d juice the carrots first, then use the blender to create the smoothie. Whew. If that wasn’t enough, I’d spend another fifteen to twenty minutes cleaning up. Not worth it.

It was time to try out something new. I’ve heard great things about Blendtec blenders and decided I needed to test one out and see if it could actually make a difference in creating a silkier smoothie. I’m beyond thrilled to be working with Blendtec to demonstrate how this delicious smoothie can be made in one step, with one appliance.

My first experience using my Blendtec was…amusing. I may have squealed and my mouth may have dropped…and yes, I did jump a bit that first time. I had no idea just how powerful the motor was or how smart the blender was! From the moment I plugged it in and turned it on, I was impressed. The control panel lights up and has smart settings to do the job for you. Hit the smoothie setting and it starts out slow, speeds up a bit, then gives the smoothie a quick blast at the end to create a perfect, silky texture. All I can say is, it makes my old blender look like a huge wimp. Sorry, old blender.

You can probably guess the verdict on how this smoothie turned out in a Blendtec. Pretty much perfect. The texture was so surprisingly smooth and it really does taste like carrot cake! The Greek yogurt provides a slight tang that mimics a cream cheese icing and with the blend of spices, walnuts, carrots and coconut, it’s basically a dessert in a glass. Except, this dessert is packed with fiber, potassium and Vitamins A, C and D! What I love, love, love about being able to finally process any vegetable or fruit right in the blender is being able to retain all of that fiber and nutrients from my produce. I love juicing, just because I think juices taste great and add nice variety to my diet, but blended veggies and fruits are simply ideal.

I’ve spent a lot of time experimenting with my Blendtec making drinks, soups, nut butters and even healthy ice cream with frozen fruit. I can’t wait to share those recipes with you! Carrot Cake Smoothie

Serves: 2

Ingredients

  • 3/4 cup milk I use unsweetened vanilla almond milk
  • 1/4 cup non-fat plain Greek yogurt
  • 1 teaspoon honey or pure maple syrup or 3 pitted dates
  • 3 medium carrots trimmed, peeled and cut into chunks
  • 1/2 frozen banana
  • 1/8 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • pinch of ground nutmeg
  • shredded coconut for serving

Instructions

  • Add the ingredients into your blender in the order given. Process on the “smoothie” setting, or on high until blended smooth.

    I juste made this smoothie, it tastes great! I would maybe add a Granny Smith apple for summer and an orange on winter days.

    One of my absolute favorite parts of blogging is seeing how one idea can be made so many different ways. I loooove this smoothie! I can’t wait to try your version! I wanted to add nuts to mine but my blender isn’t so great. I clearly need to upgrade! :)

    My girlfriend has a Vitamix and she’s been at me for quite a few years to get one. I’ve been doing protein shakes with a shaker bottle, but that requires powder mixes. I’d love to graduate to smoothies and get off the powder. I think it would be good for me all around. However, my blender is a sad Kitchenaide, which does not juice. I think this blender is right up my alley. I have a ladies group of 15, which gets together every Tuesday. Each one of them has expressed interest in this new juicing trend, and I’d love to have the Blendtec to give demonstrations for them each week. You never know, it might start a Blendtec club right here in Jupiter, Florida!!

    My almost 4 year old looks forward to a morning breakfast smoothie with berries, and I love beets or sweet potato! Love using my sister’s Blendtec ..:the final texture and sheer power is unbelievable! Can’t wait to have my own.

    My husband got me a Blendtec for my birthday in January and I too could not be more thrilled with it! I haven’t even had it a month and my usage counter is already almost to 100. I’ve made almond milk, oat milk, juices, smoothies, soups, and also used it in my everyday cooking as I would a food processor or blender. I’m entering your giveaway because I’m seriously coveting the twister jar, I would be freakin’ unstoppable if I had that thing, lol!

    I would most humbly be insanely great full for this incredible giveaway as I have Multiple Sclerosis and need to eat raw foods. With that being said, this blender would make getting my nutrients I need a blessing. I would be the honorary spokesperson!!! I am a pharmacist as well so I know a little about nutrition for preventive care..

    Ditto here on the blender. I had a decent glass pitcher kind and just waited till it went kaput. I did end up with a Vitamix but I know the Blendtec is completely on par and I’m sure I would have been happy with it as well… and may even sign up for the giveaway as I’d love to actually see them side by side.
    Even my husband was like why didn’t we do this years ago! I make smoothies at least 4-6 days a week.
    We were just in NYC for a week and it was great fun -but this morning- first on my list is a smoothie. And I think today it will be a carrot cake smoothie! cheers… wendy
