When it comes to holidays, especially one like Valentine’s Day, I like to take the approach that my Dad always had. He felt that every day should be celebrated as if it were a holiday.

John and I have been married for over twenty-five years and have never really taken this holiday very seriously.  He makes me feel completely loved every single day of the year. So…we kind of use Valentine’s Day as an excuse to  eat some chocolate, cook a yummy meal together and this year…drink some mimosas with breakfast! Personally, I see it as a day to freely express my secret love of the color pink and turn everything into the shape of a heart.

I’ve always loved mimosas. They are light and refreshing. Traditionally made with orange juice, this version is not too far off. Blood oranges are in season right now and just so perfect for Valentine’s Day or any special event. Mimosas are ideal for special breakfasts, brunches or even for a fun girl’s night.

Feel free to use this simple two to one ratio to create your own versions.  Use seasonal fruit that you love.

My husband and I are celebrating 20 years together this year, and we also don’t key in on Valentine’s Day too much. How rare and wonderful is your relationship: “He makes me feel completely loved every single day of the year.”
    Wow! Cheers to that!
