Sometimes, I’d rather have a burger than anything else. But, by the time we head into August, I’ve had my fill of regular old beef burgers, and I’m always game for changing things up. I love turkey burgers, but they need some special attention. You can’t just slap some turkey on a grill the way you can with beef. Turkey needs some love. And let me tell you…I’ve got love to give…
I have ten pounds of cherries on my hands, thanks to the Northwest Cherries Growers! I’ve been challenged by them and OXO to create some recipes! I will tell you much more about that as the week goes on (I’ve got a few more cherry recipes coming up!), but, right now…these burgers are calling to me!
I found that roasting the cherries brings out even more of their sweetness and deepens their flavor. They are so perfect against the creamy savoriness of the brie and add moisture and flavor to the turkey. The combination of flavors is delicious!
I top the burger off with a Lemon Thyme Aioli. I’ve had lemon thyme growing in a pot on my deck all summer and just the smell of it is fantastic. It’s a citrusy herb and tastes really nice with the cherries!
Turkey Burgers with Roasted Cherries and Brie
1 C. fresh cherries, pitted and chopped
1 small sweet onion, minced
2 egg yolks
1/2 t. poultry seasoning or 1/4 t. rubbed thyme
3/4 t. kosher salt
1/2 t. ground pepper
2 lbs. ground turkey
8 oz. round of brie, cut into small cubes
olive oil for brushing the burgers
6 hamburger buns
a few handfuls of baby arugula
Lemon Thyme Aioli
3 T. mayonnaise
1 T. Dijon mustard
1/2 t. chopped fresh lemon thyme (or use regular fresh thyme and a squeeze of lemon juice)
pinch of salt
pinch of pepper
Preheat your oven to 425 degrees. Line a baking sheet with parchment and place the the chopped cherries on the sheet. Bake for about 20 minutes. They should begin caramelizing on the sheet, but be careful not to burn them. When done, remove them from the oven and allow the cherries to cool on the sheet a bit.
Prepare the aioli in a small bowl. Combine all of the ingredients, cover and refrigerate until ready.
In a large bowl, combine the burger ingredients up to the brie and add the cherries. Form patties about the size of your bun, creating a bit of a dimple in the center so they won’t puff up. Place the burgers on a parchment lined baking sheet until ready to grill.
Preheat your grill to high. Just before placing the burgers on the grill, brush the tops with a bit of olive oil, then place them oiled side down on the grate. Grill the first side for 4 to 5 minutes, give them a flip and grill the second side for about 4 minutes. When done, place the burgers on a clean dish and cover with foil. Allow them to sit for at least five minutes before placing on the buns (or the buns will soak up their moisture!).
Top the burgers off with the aioli and some baby arugula or your favorite greens.
